Prosciutto Pasta

This is a wonderful pasta dish that uses a couple of ingredients that you may not always have on hand: feta cheese, and prosciutto. But let me tell you, it is well worth purchasing these items to make this dish. It's SO good!! It's easy enough for a weeknight, and nice enough for company. That's my kind of meal! Don't let the amount of olive oil scare you. It doesn't overpower the pasta, and seemed just about right. And olive oil is supposed to be heart healthy, right??

Prosciutto Pasta

12 ounces uncooked spaghetti
4 tsp. minced garlic
1/2 cup olive oil
1/2 cup chopped prosciutto
2 Tbsp. chopped black olives (more if you like them)
2 tsp. onion powder
1 tsp. dried basil
1 tsp. dried parsley flakes
1 tsp. pepper
1/4 tsp. salt
1/2 cup crumbled feta cheese

Cook spaghetti according to package directions. While it's cooking, in a large skillet, saute garlic in oil until tender. Stir in the prosciutto, olives, onion powder, basil, parsley, pepper and salt. Cook, uncovered, over medium heat for a couple of minutes or until heated through. Drain spaghetti, toss with prosciutto mixture. Sprinkle in the feta cheese. Yum!
