Mexican Pita Pizza

The other night I had hungry people in my house and no idea what to make for dinner. So, I threw together a pile of ingredients and this is what I came up with! Even my pickiest liked this one. You could really vary the taste depending on what you have on hand - different salsa, ground beef instead of chicken...the possibilities are endless!

Mexican Pita Pizza


6 Pita bread rounds
1 can Refried beans
1 lb. chicken breast
Shredded Cheese
1/2 cup Black beans
Lite Ranch dressing

1 - Cook chicken in a skillet until no longer pink. Add black beans and salsa to taste. Cook and stir until heated through.
2 - Spread refried beans on each pita round. Top with chicken mixture. Top that with shredded cheese.
3 - Bake in 350 degree oven for 8 minutes or until cheese is melted. Top each pita with a little ranch dressing.
