Breaded Chicken

Happy Friday! Today is a great day. Here is a yummy recipe for chicken that is also fast and easy. I got this recipe from Real Mom Kitchen. She has some really good recipes, and this one is no exception. Serve this with some potatoes and a vegetable, and you have a great meal!

Breaded Chicken

4-5 chicken breasts, pounded thin (I just put them in a ziploc bag and smack them a few times with my rolling pin. It's a great stress reliever! :)
1/2 cup flour
3/4 cup italian seasoned bread crumbs
2 eggs, whisked

Pour about 1/4 cup oil in an electric skillet and turn on to 350 degrees. Pound the chicken breasts until you feel better. Then, put the flour on a plate, the breadcrumbs on another plate, and the eggs in a bowl. Line them up like this: chicken, flour, eggs, breadcrumbs. When the oil is hot and everything is assembled, dip the chicken in the flour, then the eggs, and then the breadcrumbs, making sure it's well coated. Then put them into the hot oil. Let them sit and cook for about 8 minutes, until they are a deep golden brown. Turn them over and cook the same on the other side. Put them on a plate, and take a bow, because you've just made something fabulous!

  1. Yum, all these new recipes seem yummy. :) I tried the chicken enchiladas and they were great. They were extra yummy the second day--it's like the flavor needed time to set in 'cause I enjoyed them as left overs. :) Thanks! I'll tried the breaded chicken--jer only eats chicken meat--no pork, no beef, no fish, etc.
