Healthy Living Monday


Happy Monday!! It’s getting closer to Christmas...which means the New Year is right around the corner…which means it’s almost time to start thinking about resolutions. I have an idea for you – so here’s this week’s challenge: pick something you are afraid of, and resolve to conquer that fear in the New Year. Hey, that even rhymes so it must be a good idea! Ralph Waldo Emerson said “Do the thing you fear, and the death of fear is certain”. Usually things we are afraid of are really not that bad once we face them, and fear holds us back from our true potential. If you happen to be afraid of crock pots, you can try this recipe and check one thing off your list!

Crock Pot Orange Chicken

4 boneless skinless chicken breasts
1 cup orange marmalade
1 tsp. chicken bouillon granules
2 cups water
1/3 cup teriyaki sauce
3 cloves garlic, crushed
3 Tbsp. cornstarch
3 green onions, sliced
¾ cup walnuts, chopped

Mix water and cornstarch in a crock pot. Add bouillon, marmalade, teriyaki sauce, garlic, and onion. Add the chicken breasts. Cook on low for 5 hours, or on high for 3 hours or until the chicken is no longer pink. Shred the chicken in the crock pot and add the walnuts. Serve over cooked rice.
