Mini German Pancakes

Do you want a really REALLY good and easy recipe for breakfast? This is easy enough for a weekend, but nice enough for a special occasion. These are basically little baby German pancakes. I got this recipe from RealMomKitchen.com. She has great recipes! We tried this last week and loved it! I made the fruit sauce recipe from this site using blueberries. Super good!

Mini German Pancakes

1 cup milk
6 eggs
1 cup flour
½ tsp. salt
1 tsp. vanilla
¼ cup butter, melted

Preheat oven to 400 degrees. Blend first 5 ingredients in a blender. Make sure all of the flour gets blended in. While the blender is running, pour the melted butter in slowly. Grease muffin tins and pour about ¼ cup batter into each cup. Bake for 15 minutes, or until puffy and golden. Make some blueberry or any berry sauce to put on top. You could also just serve with fruit and syrup, or fruit and yogurt…lots of possibilities. Sprinkle with powdered sugar. YUM!
