Happy Monday! It is getting close to Thanksgiving. I think we need a way to deal with stress for the next few weeks, whether you’re stressing about spending time with extended family, making “the BIG meal”, or about how much to eat or not eat. SO, to help us deal with stress, the healthy living challenge for this week is to take 5 minutes each day in a quiet place, close your eyes and think about all the good things in your life. It may take you 5 minutes to think of one, but I know you can do it!
Now people, I have 5 kids. I know that finding 5 quiet minutes can sometimes be challenging. So here’s my trick that may help you too. Go into the bathroom, and lock the door. When the hoards of people in your house start banging on the door, tell them you’ll talk to them when you come out. It usually works for me, and there is my 5 peaceful minutes. Sometimes moms need to be sneaky. It’s all good!
Here is my favorite pancake recipe. Make this and you’ll already have one good thing to think about today!
2 cups flour (I use whole wheat)
2 Tbsp. white sugar
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 cups fake buttermilk (2 cups milk with a couple of squirts of lemon juice)
3 ½ Tbsp. oil
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the buttermilk, eggs, and oil. Mix well. Pour about ½ cup for each pancake onto a medium hot griddle. Cook until each side is golden.
