Time for breakfast!

As a family we eat breakfast together every morning. It takes some work to make it happen, but it is worth it in every way. It's great to start the day together. Here is a recipe for banana muffins that you can whip up fairly easily. You could even make them the night before and be all ready to go the next morning!

Banana Muffins

1 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted (or oil)
Preheat oven to 375. Spray a muffin tin with Pam spray. In a large bowl, mix together the flour, baking soda, baking powder, and salt. Add mashed banana, sugar, egg, and butter or oil. Stir all ingredients just until moistened. Spoon batter into muffin cups. I usually sprinkle some cinnamon/sugar on the top at this point.
Bake for 12-18 minutes, depending on your oven.
