Potluck Rice

Sometimes you just need a good side dish to go with dinner. This one goes great with everything. You can vary the taste depending on whether or not you add the almonds. I've made it both ways, and it's great either way! The recipe as written also makes a ton, so if I'm serving this with something else just for my family I halve the recipe.

Potluck Rice

1/4 cup butter
2 cups uncooked long grain rice
4 cups water
2 chicken boullion cubes
green onion, thinly sliced (you can vary this depending on what you like)
1/3 cup soy sauce
1/2 cup slivered almonds, toasted (or not toasted, it's good either way)

In a skillet, melt the butter. Add rice; cook and stir until rice starts to turn opaque. Add water and boullion (watch out for the steam) and bring it to a boil. Reduce heat to low, cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. Remove from heat, stir in onions and soy sauce. Cover and let stand for 5 minutes. Stir in the almonds.

Easy and delicious!
